Mix Thoroughly

I'm finding as I type up my mom's recipes from her assorted recipe cards, the main instruction after the list of ingredients is, "Combine all ingredients and mix thoroughly." So simple and yet you'd think she slaved all day over some of this stuff. The thing is, she had all day to slave over this stuff since she wasn't working.

Here's a good one:

Quaker Oatmeal Meatloaf
1 1/2 lbs. lean ground beef or turkey
1 cup tomato juice
3/4 cup uncooked oats
1 or 2 egg whites, slightly beaten
1/4 cup chopped onion, sauteed
1/2 tsp salt
1/4 tsp black pepper

Heat oven to 350. Combine all ingredients; mix thoroughly. Press into a 8x4" loaf pan. Bake 1 hour or until meat is no longer pink and juices run clear. Drain. Let stand 5 minutes before serving.

  1. My kids and I love the Joy of Cooking turkey meatloaf..Yum! It has Parmesean and breakcrumbs in it, no oatmeal.

  2. Sounds delish! I'm thinking of reinventing my mother's recipe by adding carmelized onions and a little roquefort on top. However, I'm going to have to find someone to taste it besides my husband; he says meatloaf is on his hate list, but I think that's just because he hasn't had any good meatloaf in his life. Maybe this recipe will change his mind!

  4. You're right. And I bet using turkey would be just as good. I'm trying it tomorrow night with ground top sirloin...regardless of whether my husband will eat it!
